It’s the heart of summer in Chicago, residents across the city, country and world are taking to iced tea as a means of survival. Of course, mankind has long turned toward another eminently potable beverage for spiritual, emotional and physical (kind of) sustenance–alcohol in all its beautiful and varied forms.

So, Metropolis Coffee‘s wholesale arm, Chicago Coffees & Teas, has partnered with Rishi Tea to work with a few of Chicago’s top mixologists to highlight ways & means whereby world-class tea can be used to make memorable cocktails, from tea reduced into a simple syrup and used in a drink to tea-infused tequila used in another.

This first round of unique, Rishi Tea-bearing cocktails was created by Benjamin Schiller, much-acclaimed mixologist at both BOKA Restaurant and Girl and the Goat. His inventive cocktail lists and highly professional serving style have placed him securely in the middle of a creative mash-up of Chicago-based cocktail specialists, and he has created five cocktails using different Rishi Tea products. 1. Aquavit Americano: North Shore Distillery Aquavit, Rishi Tea Tangerine-Ginger Syrup, Lime, Orange Bitters

2. To Your Health: Rishi Tea Blueberry Rooibos-infused Vodka, Pimm’s No. 1, Cucumber, Mint, Soda

3. Peaches on the Patio: White Rum, Rishi Tea Peach Rooibos Iced Tea Reduction, Grapefruit, Maraschino, Lime

4. Green Tea Gimlet: Smalls Gin (Ransom Spirits), Rishi Tea Sencha Green Tea Syrup, Egg White, Lemon, Mint, Peychaud’s Bitters

5. A Tequila Flor: Rishi Tea Tropical Crimson Iced Tea-Infused Tequila, St. Germain elderflower liqueur, Grapefruit, Soda, Edible Orchid, Rose Water
