The Fazenda Ambiental Fortaleza is a completely sustainable farm with many exciting environment-minded and community focused programs at work, including crop diversification for ecological stability, and educational outreach. This year, the FAF coffee is made up of two different varietals; a Mondo Novo, grown by Emilson Zani, and a Yellow Catuai, grown by Celso and Silvio Menussi. The Mondo Novo has a soft and deep body with dark lush fruit notes. The yellow catuai has a tightly wound acidity with great density and sweetness. Together, these coffees truly sing.
