* Buy no more than what you'll use in seven to ten days. Also, make sure that the coffee that you are purchasing is less than seven days out of the roaster by asking the cashier the date of roast. Metropolis roast dates all bags and sells all coffee within 1 week.
* Buy whole beans and grind just before using. Come on – don’t be lazy.
*Different brewing methods require different fineness of grind. A French press takes a coarser grind than a flat- bottomed filter, and a cone filter requires even a finer grind. As a standard of measure, a proper grind for a cone shaped filter is approximately the consistency of table salt. We’ll be happy to provide you with a grind sample so that you can grind to match at home.
*Figure on 2 tablespoons of freshly ground coffee per 6-8 ounces of water.
*Don't store your coffee in the fridge or freezer. Keep it wrapped up tightly in the bag that it came in, safely away from light, heat, cool, air, and moisture.
