What You’ll Need
- Kitchen scale that reads grams
- Coffee Grinder, preferably of the burr variety
- Kettle, preferably with a gooseneck
- Clever Dripper Device
- #4 Coffee Filters
- Stirring Spoon
- Great Coffee
Put the kettle on to boil. The water should be between 195 and 205 degrees Fahrenheit. You can use a thermometer or wait approximately 30 seconds after boil.
Weigh out your beans according to the chart above, but don’t grind them yet.
Fold the ends of the filter.
Place a filter into the Clever and thoroughly saturate it with hot water. This removes any papery taste from the filter as well as pre-heats your device. Place the Clever on top of carafe or mug to drain and pre-heat.
Place Clever on scale and tare weight to zero.
Now it’s time to grind your coffee, it should be medium coarse. Add it to the Clever and give it a little shake to level it. Make sure your weight is correct and tare the scale again.
Set your timer for 2m30sec and start. Begin by blooming the coffee with twice as much water as coffee (i.e. 20 grams coffee = 40 grams water) Give it a gentle stir to ensure even saturation.
At 30 seconds add the rest of the water. No need for fancy pours, your goal should be well-saturated coffee. Place the lid on the Clever.
Make sure you’ve emptied the water from your carafe or mug and place the Clever on top to begin draining. As soon as the drawdown begins, remove the lid and stir the coffee lightly in broad strokes for 5 rotations.
