TRAINING

To make coffee for someone is an act of love.

We want nothing more than to help you feel confident with the tools and techniques that help make great coffee even greater.

For that reason, we offer absolutely free training (both initial and ongoing) for you and your team if you are a business that uses Metropolis Coffee, as well as a series of videos, blog posts, and training manuals.

Training starts with an initial conversation with you: we’ll listen closely and ask a lot of questions.  Then, we craft a customized training program for you based on your unique set of needs, challenges, and goals. Training can take place at our roasterie training lab, your location, or a combination of both.

We have found that a modular approach to coffee training seems to work the best. What follows is a description of some of our more popular modules.
  • ABOUT COFFEE.  Where does coffee come from? How is it grown, processed, and roasted? How do sustainability and certifications fit into this? How should you describe your coffee offerings to your guests? What are Metropolis’s sourcing practices? What resources are available to learn more about our coffees? How do I read a coffee label? How do I keep coffee fresh and why is it important?
  • DRIP COFFEE 101. How to brew drip coffee in an automatic drip system and how to clean your equipment.
  • ESPRESSO 101. We also cover iced drinks like iced lattes, cold brew, and if your menu calls for it, blended iced drinks like frappés. Finally, we will extensively train you and your staff to properly clean your espresso and grinding equipment.

  • ESPRESSO 201. In this module, we cover more advanced barista techniques like latte art, ratio-building, single-origin espresso, and the dorkiest of tools to truly dial in your espresso. 
  • HANDMADE COFFEE. In Handmade Coffee, we cover pour-over techniques using a variety of different devices ranging from French Press to Hario v60, Chemex, and Kalita Wave. We’ll talk grind, ratios, brew times, and detailed extraction science.
