For many years, Mexico was overlooked as a reputable and dependable source for Specialty Coffee-grade offerings. Things began to change 10-15 years ago with importers, roasters, and green buyers spending more time and money travelling to and working with the farmers to take advantage of Mexico’s perfect climate, altitude, and varietals already being produced. The Comon Yaj Noptic co-op is located in the Chiapas region located in southern Mexico very near the border to Guatemala and the famed Huehuetenango region. The surrounding farmland rests in the El Triunfo Biosphere Reserve, one of the world’s most diverse forest preserves. In addition to the thousands of protected plants and animals, El Triunfo is well known for housing Mesoamerica’s largest continuous cloud forest, a natural phenomenon consisting of canopy-level cloud cover and ample rainfall. Our Comon Yaj Noptic offering benefits from this by not only growing in the perfect environment for cultivating these varietals (Bourbon, Typica, and Caturra) but also a constant shade shielding the sometimes harsh sunlight.
